Seared Herby Scallops
Enliven your palate with this seductively simple seared scallops recipe.

INGREDIENTS
1- Pixie Tangerines - 1 Tablespoon Pixie Zest
2- Wild King Salmon - 4 Fillets
3- Extra-Virgin Olive Oil - 2 Tablespoons
4- Fresh Rosemary - 1 Tablespoon, Minced
5- Fennel Seeds - 1 Tablespoon
INGREDIENTS
Mint
1/2 Bunch
Garlic Cloves
1 Bunch
Basil
1/2 Bunch
White Wine
1/4 Cup
Butter
2 Tablespoons, Room Temperature
STEPS

Finely mince herbs all together and mash with butter.

Put olive oil in pan and bring to smoking point.

Sear scallops for three minutes on each side or until browned to your liking.

Remove scallops from pan.

Throw in the wine and scrape the charred bits from the pan.

Add herb butter and cook on low heat for four minutes, constantly wishing to meld together.

Pour over scallops, top with chives and serve.
